Effects of Film Materials , Vacuum Packaging and Shelf Temperature on the Quality of Peeled Lance Asia Bell Roots

Abstract

|
Peeled fall-season lance Asia bell roots (Codonopsis lanceolata Benth. et Hook.) were packaged in 90 three-layered active film (20 § Nylon/40 § LDPE/30 § LLDPE) or 60 polyethylene (PE) film bags through vacuum and tight sealings, respectively, and were then placed on the shelf at different temperatures. Effects of packaging material, sealing methods, and shelf temperature on the sensory indices were highly significant. Appearance and texture were better maintained in active film packages, by vacuum sealing and at low shelf temperature than in PE film packages, by tight sealing, and at ambient shelf temperature. During extended marketing period above 10¡É, however, vacuum was released and consequently inflation occurred in active film packaging. Film materials and vacuum packaging should be applied selectively to prevent the inflation of the packages in relation to shelf temperature for the roots.
